Cold winter night, making Vegan Shepard's Pie tonight. Adapting the recipe from Feasting At Home's post.  I will simplify by swapping out the parsnips & sunchokes with frozen mixed veggies and swapping the truffle oil for garlic in the potatoes. I have a non-vegan to feed, she will get her own little pie with some leftover turkey from the freezer in it.
